For something quick and dirty you can use FRAPS. The method I prefer is using the svideo output of my geforce plugged into the svideo input of the capture card in another PC. I then record whatever I want to the HD and then edit the video later. Not everyone can do this as it requires two computers and lots of hd space/processor on the one doing the recording.
