by saying people are stupid idiots, you are saying people are smart...

No... double negatives don't apply to everything, including this. They apply to grammar when using something meaning "not" twice. Such as, "I didn't do nothing" gramatically means "I did something" when most people interpret it as "I didn't do anything."

In the case of "stupid idiots," idiots are stupid by definition but adding the adjective "stupid" before idiots is simply redundant. That however does not cancel out the term idiots to suggest they're smart.
