It's easy. Just specify the drive letter in 'Disk Management' after installing the SSD, format the drive, then you can create folders in it as you normally would.
For example, I have two SSD's. One is for the OS, the second SSD holds games and software I use often, and then my spinning drives contain programs that I use less often.
