I'll take it you've already ordered the GFX cards, but in case you haven't, ATI is price dropping it's 4870's; maybe the X2's might see a drop too if you still want to save a couple bucks.

Plus, Techspot has a huge article/test on DDR3 Dual Channel memory for Core i7, and whether the speeds/extra gigs or RAM are worth it.
