What programs can I use to dump the whole address space of the FDS executable to a file so I can open it with a disassembler? I've read about people doing this to grab unencrypted versions of protected software after they're loaded, un-encrypted in memory.

You dont need to do that in order to disassemble the FDS, you can just disassemble the FDS executable directly.
